Ingredients
- 3-4 russet potatoes
- 2 tbsp Vegetable Oil
- 2 large egg yolks
- 1 tbsp yellow or dijon mustard
- 1 1/2 cups Olive Oil
- 3 Garlic Cloves minced
- 1 tsp Salt
- 1 tbsp fresh lemon juice
- 2 tbsp sriracha
- Season salt to taste

Instructions
- Square off the russets by cutting all four sides off, creating a square potato.
- Slice the potatoes in slice about 1/4 inch thick slices.
- Cut each slice into quarter inch slices creating a square french fry. Rinse the potatoes and pat dry with a paper towel.
- Place the cut fries into a large bowl and drizzle with the 2 tbsp vegetable oil. Sprinkle with season salt (to taste). Toss to thoroughly coat the fries with the oil and salt.
- Place the prepared fries into the basket of your air fryer.
- Set the menu to french fries and press start. On my fryer that is 400 degree’s for 20 minutes. If need adjust the time to reach the desired doneness.
- Remove from the fryer and serve with the sriracha aioli.
- To make the sriracha aioli; Use a large balloon whisk and while whisking the egg yolks, slowing drizzle in the olive oil to create the emulsion. When all the oil has been whisked into the egg yolks, fold in the minced garlic, salt, lemon juice, and sriracha. Serve the freshly created sriracha aioli with your hand cut fries and enjoy!
